The flagship grape variety in the Penedès is Xarel•lo, that is made into two main styles of wine:
Unoaked whites, which are floral and fruity with aromas of white flowers and typical fruit. Well balanced and ideal for fish and white meats.
For oaked Xarel•los, they may have fermented in oak barrels or been aged in oak after fermenting in stainless steel tanks. Normally oaked Xarel•los are more complex, with aromas of white flowers, toasted notes vanilla depending on the kind of oak used.
Did you know that to enhance the aromas, you can macerate the must with the skins prior to fermentation? Part of the aromes are found in the grape skins.
